Fishing for Compliments

Fishing Rod

The smoked fish was incredibly flavourful, perfectly tender, and rich with smoky aroma— a great experience. I'll be back.

Hannah Morris

Fishing Boat

The pan-fried scallops were seared to perfection—golden crust, tender centre, and bursting with sweet, buttery flavour.

Fisherman on Fishing Boat

Sipping a perfectly mixed cocktail while watching the sun set over the estuary — pure bliss.

What is a Smokehouse?

A smokehouse in North America, or a smokery in Britain, is a structure designed for curing meat or fish using smoke. This method of curing involves exposing the food to smoke produced by burning plant or wood materials, which adds flavour and acts as a preservative. The taste of smoked fish is often characterised by a light saltiness and a prominent smoky essence, which can change based on the smoking process. Cold smoked varieties are generally milder and have a softer texture, while hot smoked options deliver a stronger smoky flavour and a firmer bite. The flavour can also carry hints of sweetness and savouriness, with variations depending on the fish species and the type of wood used in the smoking.
